I figured it was time to do some writing(typing) since it'd been a while. Not a whole lot has been going on with me the past few weeks. I'm very happy that it's March since that means spring and summer are around the corner. We have received inches (and inches, it seems) of rain, freezing rain, sleet, hail, 50mph winds and snow over the past few weeks. Pretty eventful weather wise and I've mostly stayed indoors and dry. I took a photo while at the library one day, this is my office away from home. Sometimes I just need a scenery change but sometimes when I get up it's hard to walk since I've been sitting for so many hours straight. It helps break up the days though. I've also been spending a lot of time making healthier meals and trying new lowfat recipes. I dredged up a old one for a little party we had for my friend I-Kwoan a few weeks ago, roasted veggie lasagna. There's a pic of me mid-assembly. I've made the most delicious chocolate chip cookies that I think I've ever made, a pumpkin-carrot bar creation, a yummy stirfry and probably the best one is a cauliflour soup.
In the queue to make next are lowfat tacos where I make my own seasoning and serve in lettuce wrap, a sicilian rice ball cassarole and enchilada turkeyloaf. I've been keeping up the swimming to complement my calorie-watching, and am anxious for the weather to warm up just a tad more which will get me out walking/jogging on a normal basis.
I'm off to do another tree planting this weekend and hopefully some snowshoeing and getting my taxes done and over with! On to a busy month of March...

Hope the tacos come out nice.
